Quick Blender Salsa!

Yum.. this is my favorite salsa. Ever. 

We're salsa freaks. 
Just so you know.

This recipe really couldn't be easier. It literally takes 5 minutes, tops.


Ingredients:
  • 1 can of diced tomatoes
  • 2 jalapenos
  • 1-2 chipotle pepper in adobo sauce
  • 1 bunch of cilantro
  • 3 cloves garlic
  • 1/2 an onion
  • Juice of 1 lime



Now, just roughly chop onion, garlic, peppers, and cilantro. Throw it all in the blender and pulse it a few times. I don't drain or seed anything, this is kind of a medium salsa.. You can always adjust peppers to your liking.

2 Ingredient Sweet Potato Gnocchi

I must start this off by saying, I LOVE pasta.
It's my go to dish. Always.

Buuut, since I've had to go dairy free while nursing my son, I've only found a couple brands that I can have & they are pricey. I'm also trying to cut my grocery budget down. So, that doesn't work for me.

Solution: Gnocchi. 

You only need two ingredients. Both of which are in your pantry.
If they aren't, we need to go over pantry staples.

Sweet potatoes. Or regular potatoes. And flour.



 To serve 4 people, I used 3 medium sweet potatoes & about 1.5 cups of flour.
The amount of flour will most likely be different each time, it all depends on how much moisture is in your potatoes,




There are two ways to cook your potatoes for this recipe.
You can bake them or you can microwave them. 
DO NOT BOIL.

After they are cooked & cool enough to work with, peel the skin off.
Then, mash it all up in a medium mixing bowl.
Add in some flour, starting at 1/2 a cup. 
Knead until a soft dough forms, adding more flour as needed.

Prince McDrool loves sweet potatoes. 

Roll dough into a thin rope & slice.


(They don't have to be pretty. They're delicious anyway.)

Heat a pot of heavily salted water on medium high until it boils.
Drop 8-10 pieces in at a time. When they are fully cooked, they will float.
Drain & serve (:

Dairy Free Oatmeal Take-Alongs

I've come to realize that I rarely eat breakfast.
Princess Bug normally has cereal or fruit.
Sir Buttface never eats, mostly because I'm not awake when he's ready to go to work.
I feel badly about him not eating & then taking his medicine on an empty stomach.

So, I came up with this. 
Oatmeal Take-Alongs.
Which, just so happen to also be dairy free so that I can grab one in the mornings, too.

They made my apartment smell uhh-mazing.

Instead of making these, I'm supposed to be folding the 25,785 loads of laundry that is laying in my closet. On the floor. From like, a week ago.
Maybe showing him these will make him forget about all of that laundry that is still not folded.. Hmm.
So, you ready? These are super easy.
Ingredients:
  • 2 bananas, mashed (Go for the ripe ones!)
  • 3 cups rolled oats (NOT instant.)
  • 2 tsps cinnamon
  • 1 tsp vanilla
  • 1 TBSP baking powder
  • 1 cup vanilla almond milk
  • 1 tsp brown sugar
  • And whatever toppings you like. (I'm not using any in this batch.. but, blueberries would be delicious!) 
     
    Now, mix it all together and let it sit while you prepare your muffin pans.
    Oops, forgot to mention to preheat the oven to 375 degrees.
     
    I'm lazy I'm awesome and used cupcake wraps so that I didn't have to clean the pans. 
    Fill the wraps with 1/3 cup of the oatmeal mixture and stick it in the oven.
    Bake for about 25 minutes or until brown around the edges.
     
     Don't make fun of my editing app. 

    I NEEDED to try it out.

Dairy Free Pancakes



On Saturday morning, Princess Bug asked me to make pancakes.

I seriously wanted to say no, lets just have eggs or something. Not because I don't like making pancakes but, because I'm on a dairy free diet & thought that pancakes would taste... pretty gross without milk or butter.

I played around in my kitchen for a bit & THIS is what I came up with. Dairy free and all. (:

Don't judge my pancake shaping skills.

They taste great, that's all that matters.



Ingredients:
  • 2 cups all-purpose flour
  • 2 TBSP. melted coconut oil
  • 1/2 TSP salt
  • 4 TSP baking powder
  • 3 TBSP sugar
  • 1-1/4 cup of water 
  • 2 eggs
  • 1 TSP vanilla
 Directions:
Mix all wet ingredients together. Mix dry ingredients together in separate bowl. Mix both bowls together & let sit for 5 minutes. Cook up your pancakes & enjoy!

Quick Hot Fudge

Princess Bug helped me make Dairy-Free pancakes this morning.
Then, we turned them into Almond Joy pancakes by using the rest of the hot fudge that I made last night.

Purpose defeated, little girl.



This hot fudge is probably the easiest thing I've ever made. 
And, it's delicious,

Definitely not overpowering & so sweet that you get a toothache.

You'll never eat the jarred stuff again!



Ingredients:
  • 14oz can of sweetened condensed milk
  • 2 TSP butter
  • 1 TSP vanilla
  • 2oz unsweetened baker's chocolate
Just combine in a sauce pan over medium low heat & continuously stir until everything is smooth and melted!

Sausage & Garlic Cream Sauce over Pasta

When I originally started thinking about this dish, I thought it was going to take 45 minutes. I was wrong! Start to finish in just 30 minutes! But, it doesn't taste like it. At all.



Sauce:
  • 1 1/2 cup heavy cream
  • 1/2 onion, diced
  • 2 tsps basil, chopped
  • 2 tsps salt
  • 3 Tablespoons black pepper
  • 1 whole head of garlic, minced
  • 2 tsps butter
  • 2 tsps cayenne pepper
  1. Heat butter over medium high heat until foamy
  2. Saute onion & garlic until tender, about 4 minutes.
  3. Add all other ingredients, except cream & cook until you can smell the basil, probably a minute or so.  
  4. Add in the heavy cream, bring to a gentle boil & then lower heat and let simmer.


Sausage:
  • 1 package precooked sausage, sliced into thin rounds.
  • 1 bell pepper, seeded & sliced thinly.
  • 1/2 onion, sliced thinly. 
  • 1 can diced garlic & onion tomatoes, drained.

  1. Throw everything in the skillet with a dab of butter.
  2. Cook until bell pepper is slightly tender.
  3. Mix sauce into sausage mixture & top with shredded mozzarella. Serve over pasta.

Heart Attack Sliders

Let me start by saying, these won't REALLY give you a heart attack.. but, they definitely aren't good for you.
That being said, they are amazing.

I normally don't do sliders. 
It's a tedious task and, let's be honest.. who wants to spend 30 minutes putting little sandwiches together?
Not me.

Instead, I usually put all of the ingredients on a loaf of french bread. Then, cut it into serving size pieces. 

Making this into sliders was Sir Buttface's idea. 


Delicious-ness. 



  • Yeast rolls. You can make your own or buy the packaged ones.. I went with the latter.
  • Sliced Pepperoni
  • Sliced Hard Salami
  • Sliced Roast Beef
  • Sliced Pepper Jack cheese
  • Butter
  • Crushed Red Pepper, to taste

  1. Slice the yeast rolls in half.
  2. Butter each piece & sprinkle on some red pepper flakes.
  3. Layer cheese, meats, cheese.
  4. Put tops on.
  5. Bake in a 350 degree oven for 8-10 minutes. 
Enjoy!
 
It's pretty simple, really. And tastes AMAZING!
 
That sauce is a creation of Sir Buttface as well.
I thought it would be AWFUL but, it's actually REALLY good. It's just equal parts of Mayo, Bleu Cheese dressing, and Jim Beam Spicy Bourbon BBQ sauce.. and some freshly ground black pepper.
