Another good one.. Honey Chicken

This is one of those things that I found online & liked the idea but, the recipe was.. boring.

This was the result.

Super easy. Throw it in the crockpot & you've got dinner.

By the way, ignore the period between those & this in the first sentence. Not sure why it's there or why it won't let me delete that.
Oh well.. moving on!

It also requires few ingredients.. for those times that you just haven't made yourself go grocery shopping yet, ya know?
Okay, sorry.. I'm rambling. Now for the recipe.

  • 2-3 chicken breasts. (I used 3 medium sized ones & we had leftovers.)
  • 1 cup honey
  • 1/8 cup low sodium soy sauce
  • 1/4 cup ketchup
  • salt, to taste
  • pepper, to taste
  • crushed red pepper flakes, to taste
  • 1 diced onion
  • 2 cloves of garlic, minced
  • Bag of stir fry veggies
Put the breasts in the crockpot. Sprinkle with salt and pepper. Mix all of the other ingredients together and pour over chicken breasts. Put your lid on & cook on high for 3ish hours. When the time is up, take out the breasts and shred. Put back into crockpot for another 20 minutes with the veggies. Serve over white rice.

If you want a thicker sauce, you can add in a corn starch slurry. But, I didn't.

Delicious!
